Myrtle Beach Marathon!!

The sun went down on my run tonight and will rise during my run tomorrow at the MB 1/2 Marathon!  Good luck to everyone who is running in the Myrtle Beach Marathon or 1/2 marathon! It is supposed to be a beautiful day!

Happy Valentine's Day!!

Happy Valentine's Day! What an awesome day to pause and show your appreciation and gratitude to the ones you love.  Today is my first MARRIED Valentine's Day and I am sooo excited!  My husband and I have decided to be totally ooygooy and stretch out our Valentine's Day to a Valentine's week!  (Those of you who know us are probably not surprised haha) YAY!  Last night was night #1, we grilled and rented a movie and it was great. Tonight, I am in charge of dinner etc since I have a shorter work day.  I am flipping through a vegan cookbook right now.... :)

Remember that Valentine's Day is a day to celebrate with loved ones mothers, fathers, siblings, grandparents, husbands, boyfriends, friends, even puppies!  Be sure to tell the ones you love how much they are appreciated today!

Merry Super Bowl!!

Its Super Bowl time!!  I love the Super Bowl!  I get so excited every year for the yummy party food, the football and of course the amazing commercials and halftime show (that's really why I love it, haha).  For as long as I can remember, my Mom, stepfather and I have had a Superbowl party with just the 3 of us making all kinds of yummy food and just hanging out having fun.  This year Reid and I bypassed all of the Superbowl parties to stay in and do the same.  SO...on our low key Super Bowl night we are having vegan nachos!! My favorite!!

Vegan Nachos:

Use as much as you want of the following....

Black and Yellow Organic Corn Chips
Organic black beans cooked with low sodium taco seasoning
Spinach
Vegan cheese (I like Diaya)
Artichoke hearts
Organic tomatoes
Mushrooms
Avacado

Layer and bake for about 30 min at 350 degrees!  ENJOY!!!
